Summer Lovin'

"Summer lovin' happened so fast..." Is it just me or is this summer already flying by? I guess time does fly by when you enjoy what you're doing. This summer has been lovely so far. I'm trying to squeeze in lots of fun stuff before I leave to Poland on August 9th. 

My summer addiction. I'm determined to get through all 3 seasons of 90210 this summer.

Favorite nail combination as of late, inspired by none other than Emily from Cupcakes and Cashmere. Essie and OPI; my two loves.

A Baking Experiment

I made an impulse purchase a few weeks ago at Home Sense. They have such a neat selection of 'health foods', and the coconut flour (on sale) was calling my name. I've heard of it before and seen nutrition bloggers use coconut related product in their foods (like coconut oil), so why not experiment with it?

Coconut flour is a great alternative to all-purpose/white flour and there are many benefits when substituting it for other flours. These benefits include: a high fiber content, high protein, mono-saturated fats, and being gluten and wheat free. The scent of this flour is also extremely nutty and you can definitely tell it's made from coconuts.

After doing some Google searches for unique recipes, I decided to make pancakes! I found the recipe here and crossed my fingers for success.

First, make your coffee. It's important for functioning on a humid Monday morning.

Step 1: Mix your wet ingredients (2 eggs +1 cup of milk (I used soy) + 2 tsp vanilla extract + packet of Splenda)
Step 2: Mix dry ingredients (1/2 cup coconut flour + 1 tsp baking soda + 1/2 tsp sea salt).
Step 3: Incorporate liquid mix into the dry. Mix until there are almost no lumps. At this point I added 2 additional tbsp's of coconut flour because the mixture was too 'runny'. 

Step 4: Heat the pan. I used a non-stick with a spray of Pam. Adjust heat accordingly because you don't want to burn your pancakes of course.

Serve your beautiful pancakes! High in protein and fiber, these are a healthy way to start your Monday morning. I ate mine with some fresh blackberries and coconut sprinkles and fell in love at first bite. I'm trying to reduce my sugar consumption, so these weren't very sweet, but people usually sweeten their pancakes with the toppings, right? These were thin, but so, so yummy.

Out With The Old...

... and in with the new camera! I finally got my desired camera last weekend. It's the Nikon D3100, and I'm in love. My parents and I split the cost as my graduation present. Work hard, spend hard baby.

I've been taking pictures like it's my job, a job I would be delighted to have. Remind me to clean my mirror.

Water. Laptop. Clothes. Necessities. 

Coconut mocha light fraps have also become a necessity. 

Speaking of coconut... I also did a baking experiment with coconut flour. Stay tuned for the post!

Look at that beautiful black forest birthday cake. My sister celebrated her 19th birthday this past Sunday. I'm in sugar coma.

Turquoise, boys!

I caved and bought another bottle of nail polish, but that's forgivable because this color - Turquoise and Caicos, is gorgeous! It's by Essie and is a popular color at the moment seen throughout youtube beauty videos and blog posts. Turquoise has always been one of my favorite colors for anything (clothes, accessories, even eyeliner), so I didn't hesitate upon this purchase. The website describes this shade as 'a flirty and pretty tropical aqua'. Lovely!

L to R: Nail polish (Turquoise and Caicos by Essie), Cuticle oil, Nail strength polish (base coat), a cuticle pusher and a nail file. 

My nail care routine goes as follows:

  1. Cut them if they're long, and then shape them with a nail file.
  2. Massage a drop of cuticle oil on each nail to soften and moisturize it. Use a cuticle pusher to push back the cuticles. Do not cut them!
  3. Apply a base coat or a nail strengthener. This makes the application of nail polish easier and prevents chipping, while strengthening your nails. This can also prevent discoloration of your nails from the outer polish. 
  4. Paint away! Be patient and let them dry in between coats (at least 10 minutes). It's worth it, trust me. I usually do 2-3 coats depending on the level of sheerness (is that a word?). 
  5. Optional: apply a top coat to protect your hair work from chipping. It also adds a layer of shine.

A Casual Dress Up

One of my favorite ways to celebrate a good friend's birthday is to get dolled up and go out for a lovely dinner. My friends and I never go all out and dress extremely fancy, but we do enjoy throwing on the heels with a high waisted skirt, with a casual twist. No pearls required.

This is my go-to outfit for a birthday dinner. A fancy skirt + a casual top + tights (optional) + nice heels/boots. Throw on a few accessories and you're golden. For this outfit, I paired a yellow long sleeved thermal top (that I'm pretty sure is a shirt that you sleep in?) with a black floral printed high waisted skirt. This has been go go-to skirt for the past year. It's so versatile, because it shines in the outfit and you can keep everything else casual. Every girl should own at least one high waisted skirt. If you find the right one, it can bring out your curves and it will hug in all the right places. Flattering is the key.

It just so happens that everything on me was from Forever 21. They always have cheap/cute/fancy outfit pieces. Cute owl necklace, no?

Oh Canada

Happy Canada Day to the Canadians out there (myself included), and Happy 4th of July for tomorrow! I was lucky enough to spend the weekend in Ottawa, although I didn't get to see Kate or William in person. I would have loved to, but I only went downtown in the afternoon and man it was hot out. The lemonade I enjoyed was delicious and oh so, so refreshing. For the night, I went to see the fire works with my girlfriends and we had a great time. I can't wait until the next Canada Day. I love being patriotic. 

Those four are my favorite nail polishes at the moment. For some reason the photo wouldn't post if rotated towards the left. Straaaange. I love the sparkle nail polish on top of a matching solid color, but just for one nail on each hand.
