Right Foot


Hello lovelies. How was your weekend? My Saturday was busy, but Sunday just dragged on. Since I was so bored, I started taking photographs of everything and I thought I'd share them in this post. 


Those delicious cupcakes above were homemade banana ones with cinnamon cream cheese frosting. I used a Martha Stewart recipe, and kind of winged the frosting. If you're interested in how I made it, i'll let you know.  I dusted them with white sprinkle balls and cinnamon for a finished effect. I think I ate 1/3 of the batch... they were so good! And when I'm bored I tend to eat a lot, yeah...


Beige and hot pink nail polish, although it looks like gray and orange.


The beverage: non-fat misto + Splenda. It was my first time ordering a misto, and I didn't like it as much as I thought I would. I think it was from the Splenda. Next time I'm going to get it unsweetened and extra hot.

Weekend Yums


Hello lovelies! I'm sitting here on a Thursday night watching The Big Bang Theory and eating whole wheat pasta with black beans and mushrooms. Sound odd? Well, lately I have been combining random foods together and they're actually yummy together! 

That combination of food reminded me of pumpkin! I remember adding pure pumpkin puree to my hot oatmeal one morning, after seeing it on a blog. A dash of cinnamon here, a sprinkle of ginger there, a swirl of molasses on top, and voila - deliciousness! I made a pumpkin smoothie after seeing it on a food blog. Did I ever mention that I'm obsessed with food blogs? Obsessed.


All of this food thinking reminded me of how I promised to share some pumpkin recipes with you guys! I'm about to show you how you can add pumpkin into a bowl of oatmeal and make it taste delicious; like a bowl of autumnal goodness, perfect for this weekend.



Ingredients

1/4 cup steel cut oats OR 1/2 cup quick oats*
~ 1 cup of water OR cow's/almond/soy/rice milk*
1/2 sliced banana
1/3 - 1/2 cup pure pumpkin puree**

1 tsp. molasses
1 tsp. cinnamon
1/4 tsp. ginger
1/4 tsp. nutmeg
1 - 2 tsp. chia seeds
Optional : sweetener (agave nectar, sweetener, maple syrup, etc.) & a pinch of salt

* substitutions are allowed, oatmeal is hard to mess up
** you can make your own (Google!) or, but the pure pumpkin in a metal can from your grocery store in the baking section. Just make sure you don't buy the pumpkin pie filling!


Since I was using steel cut oats, they require a longer amount of time to cook (20+ minutes), but the regular quick oats only require around 5 minutes. It really depends on the texture you like.

Bring the oats +  water/milk to a boil in a pot, and reduce heat to low/ medium. 


Once the oats have absorbed the majority of the liquid, add in the sliced banana. The purpose of the banana is to make the oats more creamy and add a touch of natural sweetness. The more brown the banana, the better (when they turn brown, the natural sugars come out). 

At this point, you can add in the pumpkin puree too. If you're afraid of the pumpkin, start off with a small amount (1/3 cup) and if you want more flavor, go ahead and add more. 

Take a fork and start to smush the banana and blending the pumpkin into the mix. (Did 'smush' just remind you of Jersey Shore? Me too. Ew)

Mix. Mix. Mix.


The spices: depends on which ones you want to add or have one hand, but the combination I like is the one listed above. I think it's important to at least add cinnamon for a delicious pumpkin bowl of oats.

Chia seeds are not necessary, I just have some on hand and they are very nutritious (healthy fats, fiber, protein) and add some volume to the oats (they absorb liquid very well). 


Add the spices + molasses and stir to incorporate.
 A pinch of salt is always good too just to bring the flavors together.

At this point you can add in your sweetener. If you're not used to 'spicy' / less sweet oats, add the sweetener to your taste.


et voila! I pored mine into a cute bowl and added some vanilla almond milk (mine were cooked in water) + chia seeds on top, since the chia seeds would soak up the liquid anyway.


I know this recipe was very long and explanatory, but I added all of the details for you guys :)

Enjoy with a tall mug of mocha on the side, kick back your moccasins and relax!

Kreativ Blogger

Recently I was tagged by the lovely Georgie from peachesandnothing to do the 'kreativ blogger' post.

So I have to tell you all 7 things about myself then tag ten other bloggers (I only tagged 5, because I figured that everyone should do this tag, even if you aren't a new blogger).

So, here it goes...
  1. I just turned 18 on Sunday!
  2. I think know that I spend way too much time on the internet, mainly on Tumblr, youtube and my google reader. I should really spend more time posting on my blog though. Trust me, I really want to, I just don't want to over-do it. 
  3. I'm also in University now (which is another reason I need to get off the internet), and my classes are: Literature, Philosophy: Critical Thinking, Sociology, Anthropology and French. I'm enjoying them all so far. 
  4. I love the season Autumn. Pumpkin, candles, leaves, scarves, etc., etc., oh em gee. I love it all!
  5. I kind of have a money spending problem... I always buy stuff that I don't need. I won't give examples, but let's just say it's a bad habit and it needs to stop. *cough*Starbucks*cough*
  6. I've never dyed my hair in my life. It's still a strawberry-blonde color, but it was much more "ginger" when I was born. I wish I could dye it a dark hazelnut color, but I hate the look of outgrown roots, and I feel as though I would get sick of it quickly. But maybe one day...
  7. I LOVE baking and cooking. My mother makes breakfast/lunch/dinner/snacks for everyone in my family, but I always do my own thang and make my own foods. I love putting the time and effort into making something and having a great outcome, and a happy stomach. Note to self; feature more recipe posts on this blog! I have a pumpkin smoothie that I want to share with you guys!

Monday Chills



Top - Gap, vest - H&M, jeans - American Eagle, scarf - Gap

I picked up this denim vest in H&M when I was on vacation in Poland almost two months ago and haven't work it yet. I figured that a black long sleeve top from Gap would work with it, and I'm happy with the way it looks. The scarf adds a special touch, and it's necessary for warmth because this week has already been very chilly, but I love the cold weather autumn brings. 

My Monday's tend to be relaxing because I don't have any classes, so today I got out of bed at 11 am, lounged around and got ready to go grocery shopping with my mom. Now I am watching talk shows and eating pumpkin pie. Speaking of pumpkin, I've been obsessed with it lately. I add pure pumpkin (from a can) into smoothies, oatmeal, etc. I'm going to post an oatmeal how-to this week :) Pumpkin has lots of vitamin A so it's great for your eyes and skin. I only with the pumpkin spice latte's we all love from Starbucks were also rich in Vitamins. 


Look at that pumpkin pie smoothie I made a few days ago! Ouu baby. It was vegan until I added light whipped cream ;) Do you guys want to see a recipe? 


The pumpkin obsession continues with this Creamy Pumpkin candle from Bath & Body Works. It's love.

I just wanted to add in that after my mini photo shoot, I took the vest, scarf and jeans off and put on some long black leggings. I feel like a ninja.
